Herb Good: Quick and Easy Salmon: Filleting, Grilling, Canning and Smoking. Herb Good has been a guide and outfitter for more than 30 years. This perennial camp cooking favorite returns to the Show to demonstrate the basics and beyond – everything from boiling water to preparing delicious salmon. Famous for tips on how to improvise in the great outdoors, Herb will employ the latest in propane stoves such as the one, two and three-burner (pro) models from Camp Chef.

Camas Davis: Venison and Bird Butchery: For the first time at the Pacific Northwest Sportsmen’s Show, Camas Davis will lead daily seminars on preparing and butchering game animals. Camas is founder of the mobile butchery school Portland Meat Collective (PMC) and veteran food writer for magazines such as National Geographic Adventure, Saveur and Portland Monthly. Her mastery of this culinary art began with a summer spent studying and practicing butchery in France and culminated in founding PMC. Her in-demand seminars teach everyone from curious home cooks to home chefs the tools and techniques needed to master the art of butchery, sausage making, curing and more. Camas has the know-how to turn even the most inexperienced chef into a capable butcher.

Cee Dub: Dutch Oven – Getting Started and Main Dishes. Cee Dub has been an outdoorsman, game warden and camp-cooking enthusiast for more than 25 years. He stands by his proclamation, “I’ve worn out more sleeping bags than an entire family will ever own.” This renowned Dutch oven specialist will educate camp chefs of all experience levels on the virtues of this versatile cookware. “Folks will walk away with a basic understanding of Dutch oven cooking that they can immediately put to use – even at home – and those that have used one before will learn all kinds of new tips.” Cee Dub’s Dutch oven specialties include breads, desserts and main meals. From the beginner to the specialist, Cee Dub has great tips for cooking enthusiasts of all levels.

Tiffany Haugen: Cooking Game Birds to Bulls. On the heels of her 10th cookbook, Cooking Game Birds, Oregon-based author and subsistence lifestyle guru Tiffany Haugen will share tips and recipes on turning a variety of game animals in to delicious meals. Tiffany is the author of nine cookbooks, four of which relate to the subsistence lifestyle including, Smoked Salmon—Recipes & Tips, Grill It! Plank It! Wrap It! Smoke It! and Cooking Big Game.

Steve McGrath: Fun Family Cooking. Steve McGrath of Camp Chef makes his camp cooking demonstration debut at the 2012 Pacific Northwest Sportsmen’s Show giving classes on easy to make recipes that are a ton of fun for the whole family. Get ready for family fun cooking and sure-fire hits around the campfire such as Steve’s signature fried Oreo cookies! Steve will also showcase his formidable experience wielding his line of Camp Chef outdoor cooking tools.
